PURPOSE: A method for making tree-sap beverage is provided to preserve the tree-sap beverage for a long time by maintaining freshness of effective components, and to reduce spaces for installation necessary for low-temperature storage of the tree-sap beverage. CONSTITUTION: A method for making tree-sap beverage includes the following steps: mixing tree-sap with bentonite; filtering a mixture with an ultrafiltration membrane having a net of 0.01~0.1 micrometer(a); discharging the filtered tree-sap through a permeable membrane with the pressure of 30~80 bar; sterilizing the concentrated tree-sap; and preserving the sterilized tree-sap in a low temperature. The tree is selected among Acer mono Maxim, Acer pseudosieboldianum, Betula platyphylla, Betula schmidtii, and Actinidia arguta. A sterilization process is performed for 1 ~ 2 seconds with a high pressure flash sterilization.
