<p>Noninvasive process for estimating the ratio between fat content and water content of a substance, preferably animal tissues and to deduce the fat mass and the lean mass, comprises simultaneously measuring three infrared lines radiated and injected into the substance or tested tissues, by comparing the direct absorption (transmission) or indirect (reflection-diffusion).
