The method involves mixing bay leaf and hop, extraction of the obtained mixture with liquid nitrogen with separation of corresponding miscella, cutting, drying in a microwave field with given parametres of the process and roasting chicory, mixing chicory and malt, saturating the obtained mixture with the separated miscella while increasing pressure at the same time, reducing pressure to atmospheric pressure with simultaneous freezing of the mixture, cryogenic grinding in the medium of separated nitrogen, pouring drinking water and saccharification of the obtained wort, adding brewing yeast, principal fermentation, fortification, after fermentation and filtering. ^ EFFECT: cutting on duration of the process and increasing foam stability of the end product.
