PURPOSE: Slices of seasoned and dried filefish with opuntia dillenii powder are provided to harmonize the tastes of opuntia dillenii powder and dried filefish and to ensure plane taste without sweet taste after seasoning by lowering the sugar content compared to conventional products. CONSTITUTION: Slices of seasoned and dried filefish with opuntia dillenii powder are prepared by the steps of: making filefish fillet with constant thickness by removing bones, washing it, and then cooling it; thawing the frozen filefish fillet; mixing sugar 40~50 weight%, Opuntia dillenii powder 20~25 weight%, salt 10~15 weight%, glutamic acid 8~10 weight%, and sorbitol 8~10 weight% to prepare a mixed seasoning composition; aging the seasoned filefish fillet in a low-temperature process for a certain period; drying the aged seasoned filefish fillet so that a water content becomes 10~20%.
