摘要 <P>PROBLEM TO BE SOLVED: To provide a method for simply and inexpensively squeezing various polyphenols in a high yield from grape strained lees to be disposed in making wine by fermentation. <P>SOLUTION: The method of squeezing various polyphenols from grape strained lees comprises adding water to grape strained lees to adjust the water content to 70-90%, finely tearing and crushing the pericarps of grape strained lees to exude polyphenols existing in the finely torn and crushed tissues, subjecting the finely torn and crushed mixture thus obtained to solid-liquid separation between the finely torn and crushed dregs and a mixed solution of polyphenols, and evaporating 20-50% water from this mixed solution of polyphenols to form a concentrated polyphenol mixed solution. <P>COPYRIGHT: (C)2010,JPO&INPIT
