<P>PROBLEM TO BE SOLVED: To provide a method for producing good-quality gel by allowing the gelling ability of a gelling agent to be exhibited maximumly by the control of a cooling rate at gel formation. <P>SOLUTION: The method for producing the gel includes regulating the cooling rate so as to be ≤10°C/min in a temperature range of from 80°C to 40°C, and so as to be ≤5°C/min at a temperature range of from 40°C to the finish of the gelling, and so that the cooling rate at the temperature range of from 80°C to 40°C may be equal to or higher than that at the temperature range of from 40°C to the finish of the gelling.
