摘要 <P>PROBLEM TO BE SOLVED: To provide an industrially produceable soybean-fermented food (Natto or the like) soft in a degree easily eatable by a baby or an aged person, and enabling various extensions as foods, and to provide a method for producing the food. <P>SOLUTION: The method for producing the soybean-fermented food includes a step for forming a mixed product of a fermentation food raw material containing soybeans with Bacillus natto or tempeh fungus into a string shape having a nearly constant cross section by pressure injection using an apparatus having a pressurizing piston and an opening part having a prescribed shape, and a step for fermenting the string-shaped formed body obtained through the step.
