<p>It has been found that protein/metal chelates, as they can be obtained by the process described in Swiss Patent Application No. 575,433, can be stabilised when such protein/metal chelates, whose protein portion has at least one acidic and/or basic amino acid unit from the series comprising aspartic acid, glutamic acid, histidine, arginine and lysine, are treated with a hydroxyl-containing saccharide in the presence of a solvent. The saccharide used is either a sucrose, a pentose, hexose or heptose, a lower alkyl acetal of a pentose, hexose or heptose or a mannose.</p> |
