<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat processed food, such as mayonnaise and dressing, which has no influence on flavor and is stably and clearly greened for a long period of time. <P>SOLUTION: The oil-and-fat processed food includes ground leaves of Salacia plant. The Salacia plant is Salacia reticulata or Salacia oblonga and the oil-and-fat processed food is a green oil-and-fat processed food that is a mayonnaise or dressing.
