<P>PROBLEM TO BE SOLVED: To provide a method for producing meat or fish meat containing a red chromoprotein or their processed products to improve a color tone without using or using a decreased amount of a color-developing agent such as a nitrite, and to provide a food obtained by the method. <P>SOLUTION: A lactobacillus belonging to Lactobacillus coryniformis is added to the meat or fish meat containing the red chromoprotein, or to a processed product of the meat, etc. The lactobacillus is preferably at least one species selected from Lactobacillus coryniformis K12 (accession number; FERM BP-10945), Lactobacillus coryniformis JCM1098 and Lactobacillus coryniformis JCM1166. <P>COPYRIGHT: (C)2010,JPO&INPIT |
