PURPOSE: A cutlet and a manufacturing method thereof are provided to improve tastes of the cutlet by removing bad smell of meat while improving effectiveness of components for a human body by maintaining lacquer tree extract and herb. CONSTITUTION: A cutlet includes hijiki, ground meat, a molding body molded by mixing seasoning ingredients, and a breadcrumb layer formed on the surface of the molding body. The molding body includes one or more components selected from a group consisting of sweet marjoram, basil, bergamot, oregano, sage, thyme, savory, bay, sweet fennel and rosemary. The molding body further includes lacquer extract. The seasoning ingredient includes onion 9 ~ 11 parts by weight, garlic 1.5 ~ 2.0 parts by weight, soybean protein 23 ~ 27 parts by weight, gluten 2.3 ~ 2.7 parts by weight, egg 8.5 ~ 9 parts by weight, phosphate 0.4 ~ 0.6 parts by weight, pepper 0.4 ~ 0.6 parts by weight, salt 1.5 ~ 2.0 parts by weight etc. |
