PURPOSE: A manufacturing method for instant rice is provided to minimize the loss of nutrition of a rice by freezing the rice after spraying water and drying with a hot air dryer to manufacture instant rice, and to shorten the time of cooking. CONSTITUTION: A manufacturing method for instant rice comprises the steps of: cooking regular rice with a polished rice; spreading the rice evenly and cooling for 5~15 seconds by spraying water of 0~5 degrees Celsius; freezing the rice in -30~-15 degrees Celsius; firstly drying the frozen rice with a hot air dryer for 50~70 minutes in 20~30 degrees Celsius; secondly drying the dried rice with a hot air dryer for 6~8 hours in 70~80 degrees Celsius.
