<P>PROBLEM TO BE SOLVED: To provide a method for freezing food, intended for saving time and effort of roughly cooling, and improving a quality after freezing and thawing by concentratedly cooling warm food like just cooked rice and passing an overcooled condition when freezing. <P>SOLUTION: This method for freezing food for deep-freezing food containing starch such as cooked rice comprises rapidly cooling the food at a cooling speed of ≥0.5°C/min when the food temperature is high, stopping rapid cooling to weaken cooling ability when the food surface temperature is in a temperature zone of 40-1°C, increasing cooling ability in a range avoiding the food peripheral air temperature to become ≤-15°C in order to rapidly cool when the food temperature reaches near a freezing temperature, and again rapidly cooling the product after the lapse of a prescribed time followed by performing regular deep-freezing. <P>COPYRIGHT: (C)2010,JPO&INPIT |
