摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing heat-cooked food dough from grains without passing through a flour-milling process, thereby expanding possibility for cooking grains. <P>SOLUTION: The method for producing heat-cooked food dough includes a crushing process #20 for rotating a crushing blade in a mixture of a prescribed amount of grains and a prescribed amount of a liquid to crush the grains, and a kneading process #30 for kneading with a kneading blade the dough raw material comprising the mixture of the crushed grains and the liquid into dough. Before the crushing process #20, placed preferably is a pre-crushing impregnation process #10 for leaving grains and a liquid to stand in a mixed state. In the kneading process #30, gluten, a seasoning material, a foaming-inducing material, and the like are preferably charged into dough raw materials or dough.
