PURPOSE: A red pepper paste containing ginseng using an onion enzyme liquid, a preparation method thereof are provided using a sufficiently fermented enzyme liquid to improve taste and quality of the red pepper paste. CONSTITUTION: A method for preparing a red pepper paste containing ginseng using an onion enzyme liquid comprises the following steps of: slicing onions, mixing the sliced onions with either honey or sugar, and fermenting at room temperature for 3-120 days to obtain an onion enzyme liquid(S10); diluting or concentrating the onion enzyme liquid with 45 ~ 54°brix(S20); mixing 60-70wt% diluted or concentrated onion enzyme liquid, 14-20wt% red pepper powder, 3-5.5wt% fermented bean powder, 6-9wt% wheat flour, and 6-8wt% salt in order to obtain an onion red pepper(S30); fermenting the onion red pepper(S40); dipping raw ginseng in a 1-3wt% GDL solution or 1-2wt% Glycyrrhiza uralensis extract for 2-18 hours, and pulverizing the ginseng(S60); and mixing the 65-90wt% onion red pepper and 10-35wt% ginseng(S70). |
