PURPOSE: Whole cabbage Kimchi containing beef bone extract and a manufacturing method thereof are provided to improve tastes and to increase healthful nutrients containing various amino acid, collagen, calcium and magnesium etc. CONSTITUTION: Whole cabbage Kimchi containing beef bone extract includes seasoning. The seasoning is manufactured by mixing 13 ~ 23 parts of the beef bone extract by weight, 3.9~4.9 parts of cayenne pepper by weight, 1.5~2.1 parts of garlic by weight, 2~3 parts of apple extract by weight, 0.2~0.6 parts of sesame by weight, 0.05~0.15 parts of salt by weight, 1~1.6 parts of Ammodytes personatus sauce by weight, 3.5~4.1 parts of salted shrimps by weight and etc. A sweeter has one or more components selected from a group consisting of sugar, fructose, oligosaccharide, aspartame, stevioside, erythritol, sorbitol, stevioside, erythritol, sorbitol, mannitol, maltitol, inositol, quercitol, paratinose and xylitol. |
