PURPOSE: A red pepper drying device is provided to produce red pepper which is suitable for HACCP by performing a sterilization process by using far infrared rays and a drying process by using heat and to prevent the red pepper from spoiling. CONSTITUTION: A red pepper drying device includes the following: a main body(2) with a hopper(3) formed on the top of the main body and an outlet(22) formed on the bottom of the main body; a vibrating conveyor device discharges red pepper while generating vibration by a vibration unit and is installed inside the main body; and an infrared ray heater(4) irradiates far infrared rays on the vibration conveyor device.
