PURPOSE: Functional bean curd containing red ginseng extract and a manufacturing method thereof are provided to improve storability and antioxidant activity, and to reduce the used amount of a harmful coagulant while preventing leakage of harmful components of red ginseng. CONSTITUTION: A manufacturing method of functional bean curd containing red ginseng extract includes the following step: separating soybean into soybean milk and bean curd refuse; heating the soybean milk; adding the red ginseng extract; removing a soybean milk film after cooling the soybean milk; solidifying the soybean milk; and adding 0.5 ~ 2% of the red ginseng extract. The red ginseng extract includes the red ginseng extract which is included in cyclodextrin.
