PROBLEM TO BE SOLVED: To provide an aqueous dispersion containing a polysaccharide particulate gel wherein the particulate gel comprising polysaccharides is uniformly dispersed in an aqueous medium and retains its particulate state even when heated at high temperature. SOLUTION: A preparation method of the aqueous dispersion containing the polysaccharide particulate gel comprises: a step of heating the polysaccharides and the aqueous medium to a temperature equal to or higher than the gel transition temperature of the polysaccharides to dissolve the polysaccharides in the aqueous medium; a step of applying an external force to the polysaccharides dissolved in the aqueous medium while cooling the same to a temperature equal to or below the gel transition temperature to obtain particulate polysaccharides; and a step of exposing the aqueous dispersion containing the particulate polysaccharides to ionizing radiation.
