The invention relates to a novel amperometric biosensor, the production method therefor and use of same. The invention is based on a combination of the laccase enzyme and sonogel-carbon materials. The invention can be used to take in situ measurements of analytes of interest in agri-food samples during the production, packaging and/or storage processes. In addition, given the high selectivity owing to the presence of biological substances, the same design can be adapted for a wide range of samples of interest in a field as large as the environment.
