<P>PROBLEM TO BE SOLVED: To provide a noodle cutting block plate of hand-made Japanese wheat noodle and buckwheat noodle, for stabilizing the noodle cutting block plate of hand-made Japanese wheat noodle and buckwheat noodle, capable of performing lateral adjustment of a knife stopper, freely changeable of cutting width, safely and simply usable for beginners and capable of uniformly cutting noodles. Ž<P>SOLUTION: The block plate is provided by attaching noodle cutting guide rollers 2 on a flat plate 1, and a knife stopper 4, an adjusting dial 5 and a guide flat plate stabilizing roller are attached on a handle 3 and these all are attached on the flat plate 1.
