PROBLEM TO BE SOLVED: To provide a cheese-like food product which has not been provided by a conventional art, has a preferable texture and processability not inferior to those of general process cheeses, and has a reduced content of cheese. SOLUTION: The cheese-like food product contains 10-50 wt.% raw material cheese, 10-40 wt.% oil and fat, 0.5-10 wt.% starch, and 0.5-20 wt.% milk protein raw material on the basis of the total amount. The cheese-like food product has a mixing ratio of (oil and fat + product water content) : a starch : milk protein raw material is 1 : (0.005-0.17) : (0.005-0.35). COPYRIGHT: (C)2010,JPO&INPIT |
