<P>PROBLEM TO BE SOLVED: To provide a method for developing red color in raw crustaceans such as shrimp and crab having a carotenoid dye without heating the crustacean, and giving raw crustaceans having excellent taste and palatability compared with conventional color-developing methods. <P>SOLUTION: The method for color-development of crustaceans to develop red color in a carotenoid dye comprises the treatment of a crustacean such as unshelled or shelled shrimp and crab with an alkaline aqueous solution having pH of 9.5-14. The method is carried out by successively immersing the crustacean in a plurality of alkaline aqueous solution tanks containing an alkaline aqueous solution and washing the crustacean with water for a definite time in the course of transferring the crustacean successively from one alkaline aqueous solution tank to the next alkaline aqueous solution tank. <P>COPYRIGHT: (C)2010,JPO&INPIT |
