<P>PROBLEM TO BE SOLVED: To provide an agent for improving shelf life of food, which is effective for suppressing discoloration of vegetables without imparting any unnecessary sourness to the food, and a method for improving shelf life of food. Ž<P>SOLUTION: The agent for improving shelf life of food contains trehalose, adipic acid, a pH adjuster (except for a carbonate) and a calcium salt.
