<P>PROBLEM TO BE SOLVED: To provide a kind of bread rich in various minerals and dietary fibers and having both flavor and softness inherent in bread or having flavor inherent in bun; to provide a composition for bun; or to provide such a kind of bread or bun using the composition. Ž<P>SOLUTION: A composition containing barley and brown rice and substantially containing no wheat flour is prepared. In particular, a barley-brown rice composition comprising barley flour and brown rice flour or brown rice grains, but containing no wheat-derived ingredients other than wheat gluten, and also preferably containing neither egg ingredients, milk ingredients nor oil-and-fat ingredients other than those derived from barley or brown rice, is prepared.
