A method for controlling a closed-cycle grain-germinating production process at a breadbaking enterprise includes the following operations: germinating and processing cereal grain which include husking, washing the cereal grain, the subsequent soaking thereof in water, removing the water and germinating the grains in containers at periodical watering, maintaining a moisture content up to 95 %, washing and removing the excessive starch and agitating and blowing the grain with conditioned air up to cooling in the course of germinating. Control of supplying air, water, work of an agitator and temperature regime of the grain in the germinating containers, water and air are additionally carried out, and also in the grain-germinating containers periodical agitation of the grain is carried out with the aid of a frame agitator. Soaking is conducted in water in the course of 1 hour, and watering of the grain is carried out by cold or warm water to provide accelerated and even germination for achieving the corresponding parameters of the grain mass. |
