<P>PROBLEM TO BE SOLVED: To provide a medium melting point oil and fat used for margarine, fat spread, shortening and the like: and to provide a plastic oil and fat composition produced by using the medium melting point oil and fat, having plasticity with a broad temperature range, favorable form retention, lustrous good condition and favorable meltability in the mouth, and also having good condition during preservation. <P>SOLUTION: The medium melting point oil and fat is produced by addition of 10-70 mass% of ester exchange oil and 30-90 mass% of palm oil, and has a melting point of 30-40°C. The medium melting point oil and fat comprises plastic oil and fat comprising ester exchange oil having 60-80 pts.mass of the palm oil, 10-30 pts.mass of palm core oil, and 10-20 pts.mass of liquid oil, and has SFC of 25-40% at 10°C, SFC of 15-25% at 20°C, and SFC of 5-15% at 30°C. <P>COPYRIGHT: (C)2010,JPO&INPIT |
