<P>PROBLEM TO BE SOLVED: To provide a casing capable of producing sausages with favorable crisp bite feeling and hardness when used in them, good in workability in its loading to a milled meat packing machine, thus enabling milled meat to be packed in high production yield. Ž<P>SOLUTION: The casing is obtained by treating natural gut with a protease derived from mushroom or kiwi fruit. Sausages using the casing are also provided.
