PURPOSE: A manufacturing method of black garlic juice and products thereof are provided to remove the specific tastes and smell of garlic by heating the garlic with water, and to process condensed water having alicine ingredients discharged from a manufacturing process of the products. CONSTITUTION: A manufacturing method of black garlic juice comprises the following steps: heating raw garlic for 8 ~ 10 hours in 100°C ~ 110°C after trimming roots of the garlic; removing residue after extracting garlic extract by compressing the heated garlic; heating the garlic extract with water for 10 hours in 100°C ~ 110°C; heating the extract with the water in 100°C ~ 110°C; and aging the garlic extract for 18 hours in 60°C ~ 70°C. |
