PURPOSE: A manufacturing method of cucumber pickle is provided to offer versatile tastes about the pickles by adding hot taste while maintaining sweet taste and sour taste of the pickle by adding Cheongyang hot pepper soaking liquid or Cheongyang hot pepper. CONSTITUTION: A manufacturing method of cucumber pickle includes the following steps of: removing foreign materials whie washing salted cucumber and Cheongyang hot pepper; desalting the salted cucumber with the salinity of 5 ~ 6%; re-washing the desalted cucumber; cutting the re-washed cucumber; extracting effective components of the Cheongyang hot pepper by dipping the Cheongyang hot pepper in water or alcohol; preparing hot pickle seasoning liquid by mixing the Cheongyang hot pepper dipping liquid in the pickle sealing liquid; putting the cut cucumber and the hot pickle seasoning liquid to a wrapping bag; and sterilizing the cut cucumber and the hot pickle seasoning liquid. |
