A natural seasoning for Kimchi and a preparation method thereof are provided to enable a consumer to easily and conveniently prepare Kimchi and to make Kimchi prepared using the natural seasoning to be fresh. A method for preparing a natural seasoning for Kimchi comprises the following steps of: boiling 0.3-1.0 part of dried Pollack, 0.1-0.3 part of mussel, 0.3-1.0 part of sea tangle and water in order to obtain juice; adding 0.3-1.0 part of glutinous rice to 100 parts of the juice to obtain glutinous rice gruel; mixing 2-8 parts of glutinous rice gruel, 5-10 parts of radish shreds, 2-5 parts of Welsh onion and 100 parts of red pepper seasoning mixed with chopped leeks, garlic and ginger; and adding 1-5 parts of licorice extract and 1-5 parts of plum extract on a basis of 100 parts of red pepper seasoning mixed with chopped leeks, garlic and ginger. The red pepper seasoning mixed with chopped leeks, garlic and ginger contains 100 parts of juice, 20-30 parts of dried red pepper, 10-15 parts of salted shrimps, 2-5 parts of salted hairtail, 10-15 parts of garlic, 1-3 parts of ginger, 2-5 parts of onion, 2-5 parts of pear and 1-3 parts of pine-nut. |
