<P>PROBLEM TO BE SOLVED: To provide a foam-containing oil and fat composition that does not cause crack, melting feel in the mouth and deterioration of artificial flower property and flavor and has excellent characteristics even if frozen and preserved as it is or in a decoration state in a cake, etc., and thawed, a method for producing a foam-containing oil and fat composition having excellent freezing and thawing resistance and further, an oil-in-water type emulsion oil and fat composition for providing the foam-containing oil and fat composition by including foams. <P>SOLUTION: The foam-containing oil and fat composition does not cause crack, melting feel in the mouth and deterioration of artificial flower property and flavor even frozen and preserved and thawed by adding an unfreezable protein to a foam-containing oil and fat composition. <P>COPYRIGHT: (C)2010,JPO&INPIT |
