METHOD FOR PRODUCTION OF WILD RADISH LEAVES BLOCK

PURPOSE: A manufacturing method of wild radish leaves blocks is provided to improve the texture of the restored wild radish leaves blocks while maintaining the original flavors of the wild radish leaves blocks, and to store the wild radish leaves for a long time. CONSTITUTION: A manufacturing method of wild radish leaves blocks includes the following: drying prepared wild radish leaves; restoring the dried wild radish leaves; heat-treating the restored wild radish leaves in pH 6 - 9; dehydrating the heat-treated wild radish leaves; manufacturing a mixture with a binder; and freeze-drying the mixture. A restoration step is performed for 1 ~ 3 hours in water. The binder is manufactured by cooling and heating water 90.7-94.3 weight%, gum powder 0.3-0.7 weight%, starch powder 0.6-1.4 weight% and saccharide powder 4.2-7.8 weight%.
