PURPOSE: A production method of functional fermented beverage is provided to prepare functional fermented beverage by extracting helpful functional components from plant materials using effective microorganisms. CONSTITUTION: A production method of functional fermented beverage comprises the steps of: preparing a starter; preparing a fermented solution from plant materials; fermenting it; seasoning and homogenizing it to prevent the change of physical properties and precipitates and extend preservation period; sterilizing it; and deairing it for 5minutes or more and the packaging.
