<P>PROBLEM TO BE SOLVED: To provide a smokeless roaster without the risk of a fire or a burn. Ž<P>SOLUTION: The smokeless roaster includes: an outer case 2 whose bottom part is connected through an exhaust duct 20 to suction means; an inner case 3 installed inside the outer case and provided with a first water accumulation part 3a for accumulating cooling water on the bottom part; a water tub 7 installed inside the inner case and provided with a second water accumulation part 7c for accumulating the cooling water on the bottom part: a receiving base 9 provided inside the water tub, in which a fire grate 12 is mounted on a middle stage and a gridiron 13 is mounted on an upper stage freely detachably; a gas burner 6 installed below the fire grate, for radiating radiation heat and far infrared rays toward food materials mounted on the gridiron by a far infrared radiator by heating the far infrared radiator 8 mounted on the fire grate from below; and a ventilation path 14 formed between the outer case and the inner case, for distributing smoke, oils and fats which come out from the food materials to the bottom part of the outer case together with steam evaporated from the first and second water accumulation parts.
