<P>PROBLEM TO BE SOLVED: To provide a method and an apparatus for dehydrating organic sludge by which sludge in a water treatment system is not subjected to concentration variation in a sludge storage tank, sludge treatment performance in planed throughput can be maintained, stable concentration-dehydration treatment can be performed at a fixed chemical pouring ratio, what is necessary is just to perform chemical pouring of substantially treating only sludge fed from a water treatment system, and there is no need of performing new chemical pouring to sludge in a dehydrated and separated liquid. Ž<P>SOLUTION: The method comprises: an incorporation stage where a polymeric flocculant or a polymeric flocculant and a fibrous dehydration assistant are added and incorporated to organic waste water or organic sludge containing suspended matter; a concentration stage where the flocculated sludge produced in the incorporation stage is subjected to concentration treatment, so as to obtain a separated liquid and concentrated sludge; and a dehydration stage where the concentrated sludge obtained in the concentration stage is subjected to dehydration treatment by a screw press 4, so as to obtain a dehydrated cake and a dehydrated and separated liquid, The dehydrated and separated liquid obtained in the dehydration stage is returned to the incorporation stage and/or concentration stage.
