PROBLEM TO BE SOLVED: To provide a fryer with excellent and ideal heat efficiency by allowing a convection in an oil high-temperature part 2a from being disturbed in a fryer, and also by suppressing the excessive convection and downward heat reflection to heat even an oil low-temperature part 2b. SOLUTION: The fryer includes a storage tank 1 for storing oil and a heater 4 arranged in the middle position of an oil layer 2 inside the storage tank, and also includes a heater covering body 5. The heater covering body 5 includes: a perforated plate 5a which covers the upper surface of the heater 4 and has multiple small holes 6 for the passage of the oil heated by the heater 4; and reflection plates which are projected by inclination toward the lower part of the heater 4 from both side edges of the perforated plate 5a, are formed to have a mirror plane, and have reflection surfaces 5c on the upper surfaces so as to reflect radiation heat from the heater 4 substantially toward the heater 4.
