PURPOSE: An abalone matured with korean red pepper paste is provided to ensure excellent nutrients and texture compared with raw abalone or baked abalone by mixing steamed abalone with red pepper paste. CONSTITUTION: A method for preparing an abalone matured with korean red pepper paste comprises the steps of: steaming abalone; adding 2-4 parts by weight of red pepper paste based on 1 part by weight of steamed abalone; and aging the mixture at 15°C ~ 25°C for 25 ~ 30 days. |
