<P>PROBLEM TO BE SOLVED: To provide a technology for extracting a component in a sample such as a food using a reducing agent having an inexpensive and mild reduction action. Ž<P>SOLUTION: A sample and an extraction liquid containing tris-(3-hydroxy propyl) phosphine are mixed, and a component in the sample is extracted. The obtained sample extraction liquid is brought in contact with a specific antibody specifically recognizing a predetermined substance that is inspected, and then the presence or the amount of the predetermined substance in the sample is inspected using an immunological measuring method. Furthermore, a food inspection kit to inspect the presence or the amount of the predetermined substance in the sample is provided which contains (1) the extraction liquid and tris-(3-hydroxy propyl) phosphine to add the extraction liquid or an extraction liquid with tris-(3-hydroxy propyl) phosphine added, and (2) the antibody specifically recognizing the predetermined substance that is inspected.
