PROCESS FOR PRODUCING ORGANIC ACID

The object aims to improve the efficiency of fermentation of an organic acid in a simple manner in the production of the organic acid by the fermentation with yeast capable of producing the organic acid without the need of carrying out mutation breeding, DNA recombinant breeding or the like. The efficiency of the production of an organic acid by yeast capable of producing the organic acid can be remarkably improved by treating the yeast in a culture medium containing the organic acid and having a low pH value.
