PURPOSE: A method for preparing fermented black red ginseng is provided to reduce the time required for decomposing enzyme and to block chemical enzyme reaction even thought red ginseng is exposed to the outside by inactivating various enzymes inside the red ginseng. CONSTITUTION: A method for preparing fermented black red ginseng comprises the steps of: cutting raw ginseng root or red ginseng and mixing it with water; enzyme-decomposing amylase or cellulose added in the mixture; filtering and removing the decomposed solution and aging raw ginseng root or red ginseng; and heat-treating the aged raw ginseng root or red ginseng at a high temperature to prepare black red ginseng. |
