The invention refers to the food industry, in particular jams with reduced content of sugar.The jam contains vegetable raw material, sugar, pectin, ascorbic acid, water and optionally citric acid and preservative, in the following component ratio, mass %:vegetable raw material 40.0à55.0sugar��18.7à43.7pectin��0.4à0.8citric acid ��0à0.30ascorbic acid�0.05à0.06preservative�0à0.05water��the rest,as preservative being used potassium sorbate. The result consists in producing jam of high biological value with reduced content of sugar, enriched with ascorbic acid. |
