<p>The invention relates to a device and a method for the removal of pinbones (11) from a fish fillet (10). Conventionally, the removal is carried out manually or with a separate handling device, whereby the fish for processing had to have overcome rigor mortis in order to achieve a satisfactory result. In other words, the fish had to have been stored for about four days before a removal of the pinbones could be achieved. As the element for detaching and removing the pinbones is a suction element (16), the pinbones (11) can be reliably removed even with freshly slaughtered fish and without affecting the structure of the fillet. The pinbones< >(11) can also be removed before and during rigor mortis. By means of detaching and removing the pinbones using the application of a vacuum, a dosed and gentle application to the pinbones of the tensile force necessary for detachment and removal thereof may be guaranteed.</p> |
