PURPOSE: A method for manufacturing tteok is provided to improve storage stability, to allow the sticky texture to be maintained and to enhance the restoration in case of thawing after freezing. CONSTITUTION: A method for manufacturing tteok comprises the steps of dipping glutinous rice in an antiseptic solution wherein OH radical is diluted; dehydrating the glutinous rice; steaming the dried glutinous rice at 90°C~100°C in a high-pressure steamer for 12~15 min with stirring and punching; mixing the punched glutinous rice with sugar, salt and ester with stirring and punching; mixing it with 0.3~0.5% of medium flour with stirring; cooling the tteok material to 35°C~40°C; and molding it with a tteok molding machine. |
