<p>Disclosed is a fryer of high thermal efficiency obtained as a result of unhindered convective flow within the high temperature oil zone of the fryer, and inhibition of the excess convective flow and downward heat reflection which heat the low temperature oil zone of the fryer. The fryer includes a storage tank for storing oil, and a heater provided in a position in the middle of the oil layer within the storage tank. The fryer is provided with a heater cover body constituted from a perforated plate which covers the upper surface of the heater and has a large number of small holes through which the oil heated by the heater passes, and a reflection plate that inclines downward from the heater and juts outward from the two side edges of the perforated plate and has a reflection surface formed in a mirror surface shape on the upper surface thereof for reflecting radiant heat from the heater essentially in the direction toward the heater.</p> |
