PURPOSE: A method for manufacturing the canned food, bottled food and retort food of sea urchin eggs is provided to prevent the blacking of sea urchin eggs and the loss and breakage of nutrient. CONSTITUTION: A method for manufacturing the canned food, bottled food and retort food of sea urchin eggs comprises the steps of washing the sea urchin eggs, and collecting the sea urchin eggs; washing the collected sea urchin eggs with sea water or 3% saline solution of 0°C~ 10°C; separating the foreign material from it and separating the broken one and the unmatured eggs to dip in 3% saline solution; dipping the selected sea urchin eggs in a dipping solution for 3~5 min; separating the sea urchin eggs from the solution; injecting a seasoning solution to it; and packing it into canned food, bottled food and retort food and sterilizing it. |
