The present invention relates to a process for preparing polyphenol containing compositions comprising a step of extracting a plant material with a single phase mixture of water and at least an organic solvent under agitation so as to obtain an extract rich in polyphenol oligomers. The present invention further concerns the compositions obtainable by said process as well as food incorporating such a composition. |
