<P>PROBLEM TO BE SOLVED: To provide a method for treating tea leaves, by which a tea leaf extract containing amino acids and catechins in larger amounts than those required for tea leaf extracts used for tea drinks and having a good flavor can be obtained from the tea leaves in one extraction operation, and to provide a tea drink using the extract. Ž<P>SOLUTION: The method for treating the tea leaves includes joule-heating and extracting a mixture of the tea leaves with a liquid at a lower temperature than 100°C to obtain the extract which contains the amino acids and the catechins in larger concentrations than those of extracts obtained by external heating in the same extraction conditions, and has a good flavor.
