Particle having a core-envelope structure, is claimed, where the core contains an oil or fat; the envelope contains a second fat; and the melting point of the envelope is at least 1[deg] C higher than the melting point of the core, and where the core and envelope is liquid and solid, respectively. An independent claim is included for preparing a food comprising contacting the particle with further components of the food.
