摘要 <p>The method comprises carrying a moving-up and moving-down needle holder (3) by piston pumps, whose pistons (40) are driven by a piston plate (4), supplying the needle (5, 5') with the brine by dosing units, where the piston brings the brine over the needles of the holder in the case of injection stroke in the food products moving past under the needles, and constantly keeping the brine quantity delivered in the food products through the individual needle per unit time during injection stroke. The brine quantity from the needle is delivered in unchangeable quantity per distance unit. The method comprises carrying a moving-up and moving-down needle holder (3) by piston pumps, whose pistons (40) are driven by a piston plate (4), supplying the needle (5, 5') with the brine by dosing units, where the piston brings the brine over the needles of the holder in the case of injection stroke in the food products moving past under the needles, and constantly keeping the brine quantity delivered in the food products through the individual needle per unit time during the injection stroke. The brine quantity from the individual needle is delivered in unchangeable quantity per distance unit of the penetration path and/or withdrawal path. The delivered brine quantity and the movement speed of the needle and the piston for the individual injection stroke and/or whose sectioning are regulated and/or given for adjusting the quantity of the brine to be introduced per injection stroke and per volume unit of the food products. The given speed of the needle is kept constant during the injection stroke and/or during the individual sectioning of the needle. The volume-portioned brine quantity is supplied to each needle for the injection stroke. A given number of needles is formed as multiple needles, which comprise two, three or four needles and are supplied by the same piston pumps. The brine quantity is dosed into the multiple needles for the injection stroke and the brine quantity of the multiple needles is delivered in constant quantity per unit time. The needles are assigned to an equally large units of area on the piston plate and/or on the food products to be processed and the large brine quantity measured for the units of area is supplied to all individual needles by the dosing unit for introducing the brine into the volume of the food product present below the units of area. The process is started with the delivery of the brine when the needle strikes a sensed or recognized resistance caused by a piece of the food products, when the needle captures a predetermined position in relation to the food product to be processed or when setting of the needle on the product is noticed by a scanner for the food product dependent of the height of the products corresponding to the penetration path (E) and/or during locating the resistance against the penetration of the needle that exceeds a predetermined value or during striking the needle on bones contained in the meat mass, where the penetration of the needles and/or the delivery of the brine through the needles are broken off for the injection stroke. The injection stroke comprises only penetration, penetration and withdrawal or only withdrawal of the needles over a predetermined penetration depth (E), which corresponds to a part or total height of the food products. A standstill condition of the needle and/or an interruption of the brine delivery through the needles takes place between the ending of the penetration of the needle or starting of the movement of the needle in the products and from the products. The brine delivery through the needles and the time period of the penetration of the needle into the products and/or the time period for the withdrawal of the needle are measured equally. The brine to be dosed to the needles is given with piston pumps driven by linear drives with constant speed and/or the piston plate is moved with a linear drive, a hydraulic drive or an air cylinder drive having an adjustable speed constantly remaining during injecting stroke. An independent claim is included for a device for introducing brine in particulate food products such as meat mass.</p>
